Cheddar Chive Cornbread Waffles With Fried Quail Eggs

Ready to level up your waffle game with a savoury twist?

These crispy waffles have a wonderfully flavourful base from the fresh chives, cheddar and cornmeal, which pairs incredibly with fried quail eggs, crispy ham and a drizzle of honey or maple syrup. Savoury meets sweet. It’s the best of both worlds.

Ingredients

    • 1 1/2 cups all-purpose flour
    • 3/4 cup cornmeal
    • 1 tbsp corn starch
    • 1 tsp kosher salt
    • 1/2 tsp baking powder
    • 1/2 tsp baking soda
    • 1/4 tsp freshly ground black pepper
    • 2 cups buttermilk
    • 1 cup shredded cheddar cheese
    • 1–2 tbsp honey
    • 5 quail eggs
    • 1/4 cup unsalted butter, melted
    • 2 tbsp chives, minced
    • 1 tsp fresh rosemary, finely minced

    Optional Toppings

    • Butter
    • Extra fried quail eggs
    • Fried ham
    • Drizzle of honey or maple syrup

Instructions

1.

In a large bowl, whisk together flour, cornmeal, cornstarch, cheese, baking soda, baking powder, salt, pepper, chives and rosemary.

In a separate bowl, whisk together buttermilk, melted butter, honey and quail eggs until smooth.

Make a well in the center of the dried ingredients and pour the wet ingredients into the well. Use a spatula to fold the wet ingredients into the dry until smooth. Set batter aside to rest while your waffle maker heats up.

Cook your waffles according to the manufacturer's instructions. I like to cook mine on the highest heat to ensure a crisp golden exterior.

5.

While your waffles cook, fry slices of ham and additional quail eggs for topping.

6.

Lightly butter your waffles, drizzle with honey or maple syrup and top with fried ham and quail eggs. Sprinkle with pepper and chives. Enjoy!
