Baked Pumpkin Doughnuts with Quail Eggs

Baked Pumpkin Doughnuts with Quail Eggs are sweet and spicy with a rich pumpkin flavour that's sure to satisfy your cravings! And because they're made with quail eggs, these doughnuts are packed with protein and flavour, turning them into a delicious and nutritious snack.

Whether you share them with friends or just want to treat yourself to something special, these tasty and festive doughnuts are sure to be a hit!

Ingredients

    Cinnamon doughnut batter:

    • 2 cups flour
    • 1 cup sugar
    • 2 tsp baking powder
    • 1 tsp cinnamon
    • 1/2 tsp nutmeg
    • 1/2 tsp salt
    • 1/2 cup + 2 tbsp milk
    • 6 quail eggs
    • 2 tsp vanilla
    • 2 tbsp butter, melted
    • Cooking spray

    Sugar topping:

    • 1/2 cup sugar
    • 1 tbsp cinnamon

Instructions

Preheat oven to 350°F.

Using cooking spray, grease doughnut mould and set aside.

In a medium bowl, mix flour, sugar baking powder, cinnamon, nutmeg and salt.

In a separate bowl, whisk together milk, quail eggs, vanilla and melted butter.

5.

Add flour mixture to the wet ingredients, folding in the dry mix just until combined. Do not over-mix.

6.

Pour mixture into a piping bag and pipe into greased doughnut moulds.

7.

Bake for 10-12 minutes or until toothpick comes out clean when inserted into the centre of the doughnuts.

8.

Allow doughnuts to cool before removing from the pan. Turn the pan upside down to remove doughnuts.

Sugar topping:

1.

In a small bowl mix sugar and cinnamon together.

2.

Add doughnuts, one at a time, making sure to coat the doughnut evenly with the cinnamon sugar.

3.

Serve and enjoy!
